Dark chocolate: Use a good quality dark chocolate that you enjoy eating because the mousse will taste like it! You can also use semisweet chocolate chips. If you prefer milk chocolate, you could use that instead. Whatever you prefer to enjoy with red wine will work well in this recipe.
Red wine: Look for a red wine that pairs well with chocolate. Full bodied reds pair really well with dark chocolate while fruitier lighter reds pair better with milk chocolate. If you use dark chocolate, like I did, opt for a higher tannin, bolder, bitter wine so that the flavor comes out.
Heavy whipping cream: You need chilled 35% cream that will whip up and add lots of air and lift into the chocolate mousse.
Red berries: For a bright, bold finish and to add a pop of acidity and brightness to the mousse.

👩🍳 How to make red wine eggless chocolate mousse

Step 1: In a small saucepan or microwave safe bowl, combine chocolate and wine (or wine and water). Melt on low heat stirring constantly until melted and smooth. If using the microwave, melt in 15 second intervals.

Step 2: While the melted chocolate cools, combine whipping cream, vanilla extract, salt, and sugar in a mixing bowl. Whisk to stiff peaks with an electric mixer or a balloon whisk. Set aside ¼ cup of the whipped cream.

Step 3: Once the melted chocolate cools to about body or room temperature, add the whipped cream and gently fold the mixture together. Use a spatula and stop folding as soon as there aren't any streaks left in the mixture.

Step 4: Divide the mousse between two wine goblets. Smooth the top and add a scoop of whipped cream to each. Cover and refrigerate for at least 1-2 hours to set the mousse.
Decorate with chocolate shavings and fresh red berries. Serve and enjoy!

This is the perfect make ahead dessert as it needs at least 1-2 hours to set in the fridge. You can also let it set in the fridge for 1 or 2 nights! This makes it the perfect make ahead dessert as you can make it a day ahead of time and not worry about making it the day of.
Store the mousse in the fridge without the berries - add the berries right before serving. This prevents the berries from wilting and leaking on the mousse.
