This dulce de leche caramel waffle cake is the easiest cake you could make. It's made by combining butter and cooked sweetened condensed milk, and spreading that between plain wafers. It's a family favorite and is so easy to make that you don't even really need to follow any recipe! I was introduced to it as a child one Easter dinner and I've been making it ever since. It's an Eastern European classic cake with a rich buttery caramel flavor.
But the TEXTURE. That is what truly makes this cake so moreish. It's soft and airy, while still maintaining a bit of crisp and is not soggy whatsoever. Plus, the filling just melts in your mouth.

- Butter: softened, unsalted butter is whipped until light and creamy as the base to this recipe. You'll need 1 cup.
- Wafer sheets: You will need plain wafer or waffle sheets. I used a pack of 8 large 10" square wafer sheets. You can use round ones as well! Wafer sheets can be found at specialty Eastern European stores or purchase wafer sheets online.
- Dulce de leche: It's very important that you use real dulce de leche, or boiled sweetened condensed milk. I'm usually able to find dulce de leche in a jar at my local grocery store. If you can't, check a Latino or Eastern European store. I don't recommend using Eagle brand dulce de leche because it is runny and isn't real dulce de leche. It's just sweetened condensed milk with "dulce de leche and caramel flavor". Reference the following photo to see what real dulce de leche should look like coming right out of the can. 👩🍳 How to make dulce de leche wafer cake
Wafer cake step by step

Step 1: Add the softened butter into a large bowl and beat with an electric mixer until light and creamy.

Step 2: Add salt and dulce de leche. Mix until creamy.

Step 3: Spread filling evenly between wafers. Top the last wafer with biscoff crumbs or another wafer.

Step 4: Place a piece of parchment paper over the wafers and lay a cutting board on top. Put a heavy weight like a jar of water on top for 2 hrs.
Hot tip: Let the wafers set for 2 hours so that they're easier to slice through and remain stuck together.

Step 5: Slice into diamonds using a serrated knife and a sawing motion. Enjoy!
🥄 Make ahead and storage
Dulce de leche waffle cake is great to make ahead because it gets better as it sits. Store it sealed tightly in the fridge for up to 1 week, or freeze it in an airtight container or bag for up to 3 months.
