    These are the best, easy pumpkin desserts to make for fall and Thanksgiving. They will have you thinking beyond pumpkin pie - even those who don't like pumpkin pie will love these recipes!

    The top rated recipe are these no bake pumpkin cheesecake bars. They're the perfect make ahead dessert and a great alternative to pumpkin pie. Make them one or two days ahead of your Thanksgiving or fall party and you don't need to worry about dessert the day of.

    How to make pumpkin puree

    These recipes call for canned pumpkin puree for consistency and convenience, but you can make it at home.

    Cutting a pie pumpkin or squash in half, cleaning the inside, placing it cut side down on a parchment lined baking sheet, and bake at 355°F (180°C) for 50-60 minutes. Mash with a fork or blend for a smoother consistency.

    If the puree is too wet you may need to squeeze out the excess moisture with a cheesecloth or cook it down in a dry pan until thickened - you're looking for the consistency of thick hummus or greek yogurt.

    This pumpkin cake is soft, moist, flavorful, and topped with an ultra creamy, flavorful brown butter cream cheese frosting. The cake comes together in one bowl without an electric mixer.     Chocolate Cake with Pumpkin
    This chocolate cake with pumpkin is packed with pumpkin puree and topped with the silkiest pumpkin chocolate buttercream. It's rich, moist, and has a subtle spice to it. The cake batter is an easy one bowl recipe. It's baked in a sheet pan - no need to stack and frost the sides (options for turning this into a layer cake are in the recipe notes).
