These mini egg bars have a soft sugar cookie base packed with mini eggs, and are topped with a fluffy, creamy cream cheese frosting.

The fluffy cream cheese frosting is blue and speckled with cocoa powder. Just mix together equal parts water and cocoa powder, dip a brush in and flick it onto the bars.

Beat butter and sugar until light and fluffy. Add the egg, vanilla, and beat. Sift dry ingredients in and add mini eggs. Fold.
Spread cookie dough into a lined square baking pan and smooth the top. Bake until a toothpick inserted into the center comes out mostly clean.
While the mini egg cookie bars bake, make the frosting. Beat butter and sugar until light and fluffy. Add pieces of cream cheese, beating well to combine.
Beat well and add blue food colouring. Add heavy cream to lighten it up and beat until creamy.
Spread frosting on top of cooled mini egg bar base and flick the tops with cocoa powder & water. This will give them that robin egg speckling.
Top with even more mini eggs, slice and serve. They're perfect for a party and way easier to make than cookies.
