Biscoff Cheesecake with Surprise Layer

– biscoff cookies – butter, melted – heavy whipping cream  – cream cheese – sea salt – powdered sugar  – biscoff spread – 6 biscoff cookies  – biscoff spread  – 8 biscoff cookies

Combined crushed biscoff cookies and butter. Mix well.

Pack crust tightly into the bottom of baking pan with the bottom of a glass.

Cream together cream cheese and sugar until smooth. You can use a silicone spatula for this - make sure the cream cheese is very soft.

Add biscoff spread and mix well until smooth.

Gently fold whipped cream in two additions. This is what will make the cheesecake creamy and fluffy.

Layer cheesecake filling, crushed biscoff cookies, and melted biscoff spread into the middle.

Top with remaining filling, smooth well. Chill for 8 hours or overnight until set.

Top with melted biscoff spread and let it drip off the sides. Add broken biscoff cookies. Slice and enjoy!
