    Chocolate Covered Pickles

    These chocolate covered pickles are sweet, tangy, and refreshing. They combine so many great flavors to make a surprisingly delicious treat! If you like pickles and chocolate, then this flavor combination will work really well for you. Made with only three ingredients and in under 20 minutes.

    They're perfect to make as a snack, or even alongside chocolate covered strawberries for Valentine's Day. Just like these chocolate covered strawberry cupcakes!

    • Pickles: Sweet pickles like bread and butter pickle slices (what I used) work really well with the chocolate. You can experiment with other types of pickles as well.
    • Chocolate chips: Semisweet chocolate chips will melt well. You can also use dark chocolate chips or a good quality chocolate bar.
    • Coconut oil: Oil helps thin out the chocolate to make it easier to dip.
    • Flaky salt (optional): Makes the pickles even saltier and gives them a delightful extra crunch.

    👩‍🍳 How to make chocolate covered pickles

    Step 1: Put pickle slices onto a plate lined with paper towel or kitchen towel. Pat them dry really well. The chocolate will not stick if they are wet.

    Step 2: Combine chocolate chips and coconut oil (or butter) in a medium bowl. Melt in the microwave (10 second increments, stirring well between), or melt on top of a pot filled with simmering water.

    Step 3: Dip each pickle slice into chocolate to fully coat and gently shake away the excess. Place dipped slices onto a plate lined with parchment paper in a single layer. Sprinkle with flaky salt if you want even more crunch and saltiness.

    Step 4: Place into the freezer for 5-10 minutes, until the chocolate hardens. Enjoy! Store leftovers in an airtight container in the fridge for up to 3 days.

    They taste best the first day they are made.

    Expert Tips:

    • Pat the pickles dry really well to help the chocolate stick. Too much moisture will cause the chocolate to roll off the pickles.
    • Don't overheat the chocolate or it will seize and become lumpy. Low and slow is the way to go.
    • If the chocolate gets too thick, place it back into the microwave or on top of a pot full of hot water and reheat briefly to melt.

    🥄 Make ahead and storage

    The pickles will taste the best the same day they are made. Moisture seeps out of them the longer they are stored, so I don't recommend making them too far in advance.

    They will keep well refrigerated in an airtight container for up to three days.

    ❔ What kind of pickles do I use?

    Sweet pickles like bread and butter pickle slices (what I used) work really well with the chocolate. You can experiment with other types of pickles as well.

    If you're using a saltier pickle like a dill pickle, I recommend cutting the pickles into slices or spears, placing them in a bowl, and sprinkle with a tablespoon of granulated sugar. Let them sit for 30-60 minutes before drying them out with a paper towel.

    ❔ Can I make chocolate covered strawberries?

    Yes you can - you can even make a mix of chocolate covered pickles and all kinds of fruit!

    Make sure that you don't leave the chocolate covered foods in the freezer or they will freeze through. You want to leave them in the freezer just enough to set the chocolate!

    📖 Recipe FAQ

    Can I use milk chocolate chips for chocolate covered foods?

    I don't recommend using milk chocolate chips because they usually don't melt well. If you want to use milk chocolate, I recommend using a good quality milk chocolate bar or milk chocolate baking chips.

    Why is chocolate not melting smooth?

    Make sure you're not overheating the chocolate. Stir frequently so it melts evenly. If you're still having trouble, try melting a good quality chocolate bar - they will usually melt very smoothly.
