Red Velvet Mini Conversation Heart Cakes

This recipe uses small round pans and a bit of simple geometry to make the heart shapes. Other options are included if you don't have round pans.

Ingredients

– butter  – vegetable oil – granulated sugar – salt – large eggs  – buttermilk  – vanilla extract – red gel food colouring – all purpose flour  – cocoa powder  – baking powder – baking soda – butter  – powdered sugar – pure vanilla extract – cream cheese  – heavy whipping cream – food colouring

1.

Beat butter, oil, and sugar together until light and fluffy. Scrape down the bowl to make sure it's even.

2.

Add eggs one at a time, beating between each addition. Scrape down the bowl halfway for even mixing.

3.

Add the rest of the wet ingredients and the food colouring. It's ok if the mixture curdles it will smooth out with the flour.

Sift dry ingredients into the bowl. Mix until smooth and divide into three 4" round cake pans (greased and lined). 

5.

Bake until a toothpick inserted into the center comes out clean, 22-30 minutes. Let cool in the pans at room temperature.

Make cream cheese frosting by beating together the ingredients in order and adding cream at the end to make it fluffy. 

7.

Cut each cake in half to make 2 layers. Spread frosting between layers. Place top layer back on like a sandwich.

Cut a "V" shape at the bottom of the circle to make the bottom of the heart shape. Use a serrated knife and saw through the cake. 

9.

Add the bottom semicircles to the top to make the "butt" of the heart. Trim to make the heart smooth and even. 

10.

Cover with a thin layer of frosting and chill to seal in all the crumbs. This will ensure a clean final layer of frosting.

11.

Divide the rest of the frosting and colour green, pink, and yellow. Colour a bit of frosting red for the writing and place into piping bag.

12.

Pipe messages on top of the cakes and serve! They really are the perfect cakes for Valentine's day.
