what you will need:
– 3 cups oreo crumbs – 4 tbsp unsalted butter – ¼ tsp sea salt – 32 oz cream cheese – 1 cup granulated sugar – ¼ tsp sea salt – ¾ cup sour cream – ½ cup heavy cream – 1 tbsp white vinegar – 1 tbsp pure vanilla extract – 4 tbsp cocoa powder – 3 large eggs – red gel food colouring

Combine crumbs, butter, and salt until even.

Pack it into a springform pan to create a crust. Bake for 12 minutes and let cool.

Mix cream cheese and sugar until completely smooth. Scrape down the bowl to ensure an even batter.

Add the rest of the ingredients, blending well between each addition.

Pour onto baked crust and tap it a few times to release any large air pockets.

Bake in a water bath for 70-90 minutes. It's done when the edges are set and the middle is still jiggly (swipe up to see all the options in the full recipe).

Chill for at least 8 hours or overnight to completely set the cheesecake and for the flavours to develop.
