This oreo tiramisu has all of the flavours of a traditional tiramisu with a very nontraditional swap of ladyfingers for chocolate sandwich cookies.
– Creamy: The filling gets cooked (so no raw eggs) and whipped cream is folded in at the very end to make it light and creamy! – Oreos: The oreos get soft and more delicious as the coffee soaks into them. They really are the perfect dunking cookie. – Make Ahead: It needs to set overnight so it's the perfect make ahead cake for the holidays!
The oreos are dunked into strong coffee but you can use decaf coffee, tea, milk, or coffee liquor instead! My favourites are coffee or Kahlua.
what you will need:
– 4 large yolks – 2 large eggs, whole – ⅔ cup granulated sugar – 1 tsp pure vanilla extract – ½ cup strong coffee – 1 lb mascarpone cheese (450g) – 1 ½ cup heavy whipping cream – 1 cup strong coffee cooled – 1 family pack oreos – ¼ cup cocoa powder

Combine yolks, eggs, sugar, vanilla, and coffee in the heat safe bowl. Whisk until combined.

Place the bowl on top of a saucepan with boiling water and whisk. Continue whisking with a wire whisk until the mixture foams up and thickens considerably.

Remove from heat and let cool for 10 minutes. Add mascarpone cheese and whisk it into the egg yolks and whisk until smooth. If it’s still lumpy you can use a blender to help make it smooth.

Whip the cream until medium-stiff peaks with a whisk or stand mixer. Be careful not to overwhip or it will become grainy. Gently fold into egg mixture.

Dip the oreos into the coffee and place in a single layer in a 8” by 11” oval dish or a similar sized dish. Spread half of the filling on top of the oreos. Layer more coffee dipped oreos and spread the rest of the filling on top. Cover and refrigerate for at least 8 hours or overnight.

Before serving, dust the top with cocoa powder and sprinkle with crumbled reserved oreos. To serve, slice or scoop onto plates and serve!
