what you will need:
– 1 cup + 1 tbsp butter – ¾ cup brown sugar – ½ cup granulated sugar – ¼ tsp sea salt – 1 large egg – 1 tsp pure vanilla extract – 1 ⅓ cup all purpose flour (160g) – ½ tsp baking soda – ⅔ cup toffee or skor bars crushed into pieces – 1 cup chopped chocolate and/or chocolate chips – 1 tsp flaky salt
1.
Brown the butter in a medium saucepan. Melt the butter on medium-low heat until it starts to foam and simmer, stirring consistently so it doesn’t burn. The foam will subside and you will start noticing the bits of white milk solids start to turn toasty brown.
2.
Add brown sugar, granulated sugar, and sea salt to the butter and whisk to break up any lumps. Add egg and whisk vigorously.
3.
Add dry ingredients, chocolate, and toffee. Fold until incorporated. Chill for 10 minutes so dough is firm enough to scoop. Scoop and chill for 45 more minutes.
4.
Bake the cookies in preheated oven. Use a spoon to push any uneven edges back into the cookies once baked and sprinkle with flaky salt. Let cool on cookie sheet.
