Carrot Cake Ice Cream

– shredded carrots – butter  – brown sugar  – cinnamon – ginger  – cloves  – nutmeg  – cream cheese  – sweetened condensed milk  – pure vanilla extract – heavy whipping cream  – toasted pecans  – golden oreos 

Ice cream


Cook down the carrots, butter, sugar, and spices until carrots are soft and fragrant - about 5 minutes.


Mix together sweetened condensed milk and softened cream cheese well to remove any lumps. You can do this without an electric mixer.


Whip cream to medium-stiff peaks. Make sure the cream and bowl is chilled to help it whip up. This gives the ice cream its structure.


Gently fold together whipped cream, condensed milk mixture, carrots, oreos, and nuts. Change up the mix-ins and add raisins if you like!


Transfer to loaf tin, cover and chill until completely frozen, about 8 hours. Enjoy! It will keep well in an airtight container frozen for up to 2 months.
