– unsalted butter  – vegetable oil – granulated sugar – sea salt – large eggs  – sour cream  – pure vanilla extract – lemon juice – grated lemon zest  – all purpose flour – baking powder – baking soda – buttermilk room temperature – blueberries, fresh or frozen   – blueberry filling – blueberry cream cheese frosting

Beat butter, oil, and sugar until light and fluffy. Add eggs one at a time, beating in between. Scrape down the bowl.

Add the rest of the wet ingredients and lemon zest. Beat until smooth. Scrape down the bowl frequently to incorporate smoothly.

Alternate sifted dry ingredients and buttermilk, folding in between each addition. Stop folding as soon as no more dry streaks of flour remain.

Coat blueberries in flour and add to the batter. Fold to incorporate. If using frozen blueberries, don't defrost them.

Divide batter into three greased and lined baking pans. Smooth the tops and bake. If they don't all fit in your oven, refrigerate until ready to bake.

Make the blueberry filling: Combine all ingredients, cook on medium heat until thickened, and let cool completely in a non-metal container.

Make the blueberry cream cheese frosting. Fold the frosting with a spatula to get rid of large air pockets and make it creamier.

8.

Fill and stack the cake. Don't add too much blueberry filling or it will make your cake slide around. 

9.

Pop the stacked cake in the fridge to set and frost with a final layer of frosting. Use a long metal spatula and to get smooth sides.

10.

Pipe a border on top of the cake. Fill with more blueberry filling and drip some filling down the sides.
