Biscoff Stuffed Cookies

– all purpose flour – cornstarch  – baking powder – baking soda – cinnamon – butter  – brown sugar  – granulated sugar – sea salt – large egg  – large egg yolk – vanilla extract – biscoff cookie butter – biscoff cookies

Mix together flour, the rest of the dry ingredients, and crushed biscoff cookies. Set aside for later.

Beat together butter, sugar, and eggs until light and fluffy. Scrape down the bowl to make sure everything is even.

Scoop and measure the cookie dough into balls. If you don't have a scale, you can use an ice cream or cookie scoop.

Flatten the cookie dough ball into a disk. Add a biscoff cookie snapped in half and a heaping tablespoon of biscoff. 

5.

Place another disk of cookie dough on top and seal the sides. Roll the cookie dough in crushed biscoff. Chill, bake, and enjoy!
