This no bake Baileys cheesecake is ultra creamy, packed with loads of irish cream coffee flavour, and has a crunchy oreo crust. The perfect St. Patrick's Day dessert.

what you will need:
– whole oreos – unsalted butter – sea salt – instant coffee powder – boiling water – white chocolate – heavy whipping cream – cream cheese – powdered sugar – pure vanilla extract – Baileys liquor – chocolate ganache – whipped cream – chocolate curls, coffee beans, and/or oreos

Mix together crushed whole oreos and melted butter until even. You can find pre-crushed oreos in the baking section at the grocery store if you prefer.
Pack it into the bottom of a springform pan. Use the bottom of a glass to pack tightly. Set aside while you work on the filling.
Beat cream cheese, sugar, and vanilla until creamy. Add melted white chocolate and beat until creamy.
Add Baileys into the cream cheese mixture and mix until even. Whip cream in a separate bowl until stiff peaks.
Gently fold whipped cream into cream cheese mixture. Add half of the filling on top of the crust and smooth the top.
Add dissolved coffee powder into the rest of the filling and layer on top of the rest of the batter in the pan. Smooth the top and chill for at least 9 hours.
Run a knife along the outside to help release, and take the ring off. Top with chocolate ganache.
Pipe whipped cream on top and top with chocolate curls, oreos, and/or roasted coffee beans. Slice and serve!
