THICK Buttercream Frosted Sugar Cookies

These buttercream frosted sugar cookies are soft, thick, and topped with chocolate and vanilla whipped buttercream.

The sour cream and touch of cornstarch help make them extra thick and soft (substitutions for cornstarch are in the recipe).  A touch of almond extract give it that signature sugar cookie flavour!

what you will need:


– butter  – granulated sugar – salt – whole egg  – egg yolk  – sour cream  – pure vanilla extract – almond extract – all purpose flour  – cornstarch – baking powder – baking soda – butter  – powdered sugar – sea salt – pure vanilla extract – heavy whipping cream – cocoa powder sifted – sprinkles




Combine, salt, and sugar. Mix until light and fluffy. Add vanilla, almond extract, egg, and yolk, beating well. Scrape down the bowl. 


Add sour cream and mix until light and fluffy. Scrape down the bowl again.


Sift dry ingredients right into the bowl and fold to make a thick, sticky dough. Wrap and refrigerate for at least 45 minutes to firm.


Roll out dough on a floured surface and cut out cookies. Pop in the freezer for 5 minutes to firm up again. This will make them extra soft.


Set onto lined baking sheet and bake for 8-10 minutes until lightly golden brown edges. They will puff up a little bit so give them room to rise. 


Cool completely on a cooling rack before frosting with buttercream.


Beat butter, sugar, and salt until light and fluffy, about 8-10 minutes. Add vanilla extract and beat again. Scrape down the bowl from time to time.


Add heavy cream a tablespoon at a time to loosen the texture until you get a very light and creamy buttercream. Set aside half of the frosting.


Add cocoa powder into the remaining frosting and beat until light and fluffy. Add more cream a tablespoon at a time if needed. 


Frost half of the cookies with vanilla and the other half with chocolate buttercream. Top with sprinkles and enjoy!
