Strawberry Cheesecake Cookies

Ingredients

– strawberries  – lemon juice – granulated sugar – cornstarch – melted butter – brown sugar  – granulated sugar – salt – vanilla extract – egg  – all purpose flour  – baking soda – ground cinnamon – graham cracker crumbs  – cream cheese – granulated sugar – vanilla extract – egg  – salt

Whisk together melted butter and sugar. Add egg and vanilla. You can use a wire whisk like in the photo.

Whisk until thickened and lightened in colour, about 30 seconds with a wire whisk. It will look like this.

Sift flour and baking soda right into the same bowl. Fold until incorporated. Add graham crumbs and fold.

Scoop the dough into 12 balls onto a parchment lined baking sheet. Indent with the bottom of the scoop or fingers. Chill.

Whisk all the ingredients for the cheesecake filling in a separate bowl. Have the cream cheese extra soft for it to be easier to mix.

Fill chilled cookie dough with cheesecake filling and dollop strawberry sauce on top. Swirl with a toothpick.

Bake until edges are slightly golden. Let cool on the pan for a few minutes before transferring to a cooling rack. Top with crushed graham crackers.
