These no bake funfetti cheesecake bars are creamy, fluffy, and packed full of sprinkle fun! They are on top of a dreamy brown sugar cinnamon graham crust.

They set very soft and creamy because there's no gelatin. It relies on the cream cheese and whipped cream to set into a fluffy mousse like texture. Since it has to refrigerate for at least 6 hours or overnight, this is the perfect make ahead dessert!
what you will need:
– 4 tbsp brown sugar – 1 tsp cinnamon optional – ⅛ tsp sea salt – 2 ⅓ cup graham cracker crumbs (350g) – ⅔ cup butter melted – 1 ½ cup whipping cream – 16 oz cream cheese (500g) – ¾ cup granulated sugar – ⅛ tsp sea salt – 2 tsp vanilla extract – 2 tsp fresh lemon juice – ¼ cup sprinkles

Prepare crust ingredients and melt the butter in a saucepan or in the microwave.

Mix together crust ingredients and pour into lined 8" or 9" square baking pan. Smooth out and pack tightly. Set aside.

Whip the cream for the filling and set aside. Make sure the cream cheese is at room temperature (softened) so that it blends up smoothly.

Beat together the cream cheese, sugar, vanilla, salt, and lemon juice until smooth. I used a wire whisk because my cream cheese was pretty soft.

Carefully fold in the whipped cream and sprinkles. Spread on top of the crust, smooth and refrigerate for at least 6 hours or overnight to set.

Pipe whipped cream on top and cut into 8 bars. Place 2 halves of a golden Oreo on top of each bar and serve with even more sprinkles on top.
