These marshmallow cookies are crisp on the edges, soft and fudgy in the middles, and stuffed with gooey marshmallows. The marshmallow middle peaks through the cookie dough as they bake.

Combine melted butter, sugars, and salt. Whisk until smooth.
Add egg and vanilla and whisk until thickens.
Sift flour, cocoa, and baking soda. Fold until fully combined.
Add half the chocolate chips into the dough and fold.
Scoop or roll the dough into a ball. Flatten into a disk and place mini marshmallows in middle. Close the dough around the marshmallows and press remaining chocolate chips onto the top of each dough ball.
Refrigerate for 45 minutes. Preheat oven. Bake cookies for 8-10 minutes. Let them cool for 5 minutes. Serve and enjoy!
